Chinese Almond Cookies 2 1/2 Cups Sifted Flour 1 Tsp baking powder 1/2 Tsp salt (??) 2 eggs 3/4 Cup sugar 2/3 Cup corn oil 1 Tbs orange juice 1 Tsp almond extract 1 Tsp vanilla extract 1 Tbs water 1/2 Cup whole blanched almonds Sift together flour, baking soda and salt. Beat one of the eggs until frothy. Gradually add sugar, beating until thoroughly mixed. Mix together corn oil, orange juice and extracts. Gradually add to egg mixture, beating until well mixed. Add flour mixture in 2 additions, beating until smooth. Form dough into 1 inch balls. Place about 2 1/2 inches apart on greased baking sheet. Flatten with fingers or fork to 1/2 inch thickness. Mix together remaining egg and water. Brush lightly on tops of cookies. Place almond in center of each. Bake in 350 degree oven for 10 to 12 minutes, until lightly browned. Makes about 3 doz.
